***Pork Cutlets in Mustard Sauce***
*Ingredients*
2 tbsp. veggie oil
4 pork cutlets
1 lb. fresh mushrooms, sliced
1 apple cored, peeled and sliced
1 1/2 cups chicken stock
1 tbsp. cornstarch
2 tbsp. cold water
1 tbsp. dijion mustard

*Directions*
1) Heat half of oil in frying pan, when hot add pork cutlets and cook 3 minutes over medium high heat. Turn cutlets over. Season well and cook additional 3 to 4 minutes depending on size. remove from pan.
2) Add remaining oil, mushrooms and apple to pan. Season and cook 3 minutes over high heat. Stir in chicken stock. Bring to boil. Mix cornstarch with cold water. Stir into broth and cook 3-4 minutes over low heat. Remove pan from heat stir in mustard. Place pork in sauce and serve.
Serves 4
