1/2 pound lamb breast or other lamb part (discard fat before cooking)
1 egg
1 tablespoon fresh parsley (or 2 dried)
1 1/2 cups water (for 1/2 cups lamb broth)
1 cup rice flour
1/2 cup firmly packed cook ed long-grain rice
1 rice cake firmly packed
Bring lamb meat to boil in about 1 1/2 cups of water and allow to simmer for about an hour. Remove meat so that you have 1/2 cup of cooked lamb and 1/4 cup lamb broth. Combilne broth, egg, and meat in a bowl. Mix rice, rice flour, rice cake, and parsley in another. Blend the two to form a ball. Don't bother to flour cutting board because this is an extremely sticky dough. I suggest you use a 1" or 2" round cutter for these treats. Work very quickly by rolling out dough to a 1/4" thickness and cutting. Bake ina 4oo degree oven for about an hour. As baking time will depend on your rice flour, check to see if baked. If not. this makes about 24 2" round lamb and rice treats.
