Dough: 1 1/4 cups all-purpose flour 3/4 teaspoon baking powder 1/4 teaspoon salt 1/4 cup butter or margarine 1 egg 3 tablespoon sour cream 1/3 cup confectioners sugar
Filling: 6 eggs 2 cups confectioners sugar 1 1/2 teaspoon vanilla extract 1 pound farmer cheese or ricotta 2/3 cup melted butter 1 1/2 cups unseasoned mashed potatoes 2 teaspoons baking powder 1/2 nutmeg 1/2 teaspoon salt 1/4 cup grated orange or lemon peel
1.For dough,comnine flour,baking powder,and salt in a bowl.Cut in butter with pastry blender.
2.Beat egg into sour cream.Stir into flour mixture,Stir in sugar.Knead dough until well mixed and smooth.
3.Roll dough on a floured surface into a rectangle.Line a 13x9x2-inch pan with dough,and bring part way up sides.
4.For filling,separate 1 egg and reserve the white,Beat remaining yolk and whole eggs with the sugar 5 minutes at high speed of electric mixer.Add vanilla extract.Beat at high speed until mixture softly piles softly.
5.Press cheese through a seive.Blend cheese with butter and potatoes,baking powder,nutmeg,and salt.Stir in orange peel.Fold into egg mixture.Turn into prepared crust pan.
6.Bake at 350 about 45 minutes,or until set.Cool
7.Cool well before cutting serves 32 pieces.
