1 to 2 tablespoons margarine or butter
4 skinless, boneless chicken breast halves (about 1 pound in total)
1 small onion, chopped
1/3 cup bottled plum sauce
1 tablespoon vinegar
1 tablespoon water
1/4 teaspoon five-spice powder
1/8 teaspoon garlic powder
Hot cooked fettuccine or spaghetti (optional)
In a large skillet melt 1 tablespoon of the margarine over medium heat. Cook chicken in hot margarine for 8 to 10 minutes, or until chicken is no longer pink, turning once. Remove chicken, reserving any drippings in skillet. Cover chicken and keep warm.
For sauce, cook onion in the reserved drippings until tender. (If necessary, add the additional 1 tblespoon margarine to skillet.) Stir in plum sauce, vinegar, water, five-spice powder, and garlic powder. Cook and stir until heated through.
Serve the chicken with sauce and, if desired, hot cooked fettuccine or spaghetti.
