What do you cook when you're in a hurry??

What are some of the easiest meals you make? I'm talking about things that actually count, not grilled cheese or PB&J sandwiches lol. For myself, I guess it would be chili. I love making chili. Very little dishes get messed up, and its fast. Tacos can be made pretty quick too. Another one I make is called party pizzas where you brown a pound of hamburger and a pound of sausage. Then cube up 1 lb Velveeta cheese. Mix it all together and melt the cheese. Then add some oregano and garlic salt to the mixture. And then you put a little bit over a piece of bread and then toast it in the oven a few minutes. It might sound gross, but its actually pretty good. Fattening but good..

Several times a month, I would make a 'pot luck' meal and call it "Name Your Own Dish Day". We made it into a game and the children loved it..the game that is. :) Most of the meals tasted good and the children would ask for it again, but occasionally, it was a disaster. LOL When this happened, we would have pizza. :) Now that my children are grown, they still ask for some of the dishes I use to make.

Whenever I make something for example meatloaf that calls for sides, I always make 1 main dish and 3 sides. Usually a bread and two veggies. I probably make too much. But its a habit. I don't feel like I cooked right unless I've made 3 sides.

Date: 5/16/2004 8:21:00 PM  From Authorid: 22188    If I'm in a hurry to have it DONE, I fix Mexican (nachos, burritos, tacos, etc) because it's quick, but if I have plenty of time before I need to eat, I just don't have time to devote to COOKING, I bake some chicken (a little butter, seasoned salt, and lemon pepper) and a potato....only one baking pan and your dishes to wash, quick preparation time, low matinence, and healthy too!

Just dice up some chicken, cook a bag of frozen mixed veggies, add cream of mushroom, cream of chicken and cream of celery soup (undiluted). Use a can of biscuits to roll out for dough on the bottom. I also put a layer of biscuit dough on top. Cook just a few minutes in the oven and done. My husband loves this stuff.
