2 teaspoons toasted sesame oil
1/2 teaspoon crushed red pepper
4 skinless, boneless chicken breast halves (about 1 pound in total)
2 tablespoons sugar
2 tablespoons peanut butter
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon cooking oil
1 clove garlic, minced
4 French-style rolls, split and toasted
1/2 cup packed shredded broccoli (broccoli slaw mix)
1/4 cup radish sprouts
1/4 cup chopped peanuts (optional)
In a small bowl combine sesame oil and crushed red pepper. Brush both sides of chicken with the oil mixture.
Place chicken on the rack of an uncovered grill directly over medium coals. Grill for 12 to 15 minutes or until chicken is no longer pink, turning once halfway through grilling.
Meanwhile, for sauce, in a small saucepan stir together sugar, peanut butter, soy sauce, water, cooking oil, and garlic. Place on grill rack alonside chicken and heat until sugar is dissolved, stirring frequently.
To serve, place chicken on bottoms of rolls. Spoon on sauce and to with shredded broccoli, radish sprouts, and, if desired, peanuts; replace roll tops.
Make 4 servings.
NOTE: the heat from the grill will blacken the outside of the saucepan, so use an old one or a small cast-iron skillet.
