1 cup chopped onion 1 cup chopped celery 1 (15 ounce) can diced tomatoes, undrained 1 cup water 2 tablespoons splenda 1/2 teaspoon chili seasoning 1 teaspoon dried parsley flakes 1 1/2 cups diced extra lean ham 1 cup uncooked instant rice
In a large skillet sprayed with butter flavored cooking spray, saute onion and celery for 8 minutes or just until celery is tender. Stir in undrained tomatoes, water, splenda, chili seasoning, and parsley flakes. Add ham and uncooked rice. Mix well to combine. Lower heat, cover, and simmer for 15 minutes or until vegetables and rice are tender, stirring occasionally.
Makes 4 servings (1 cup each)
