GRILLED GARLIC ZUCCHINI - George Foreman Grilling -

3 zucchini, medium sized
2 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic, finely minced
1/4 teaspoon black pepper, coarsely ground
1/2 teaspoon salt


Peel the zucchini and cut lengthwise into thin matchstick pieces. Combine the oil, lemon juice, garlic, pepper and salt in a medium sized bowl. Toss the zucchini with the garlic mixture and let stand for 10 minutes to allow the zucchini to absorb the flavors.

Brush or wipe your GFG with cooking oil and preheat.

Place the zucchini in the grill widthwise (horizontally) and grill for 4 to 5 minutes, or until tender crisp.

Makes 4 servings.
